Raw Coconut Almond Yogurt w/ Goji Berries and Blueberries

Ingredients

  • 1-Cup Raw Almonds
  • 1 Young Thai Coconut (Meat + Water)
  • 2 Vegan Probiotic Capsules
  • 1/2 Tbsp Liquid Sweetener

Soak 1-Cup of Almonds for at least 12 hours*. Drain soaking liquid. Add 1/2 of the almonds, coconut meat, and half of the coconut water to the blender and blend. Once the contents are blended well, slowly add additional almonds and coconut water to the blender. Add honey and probiotics capsules, blend for a few more seconds then stop.

Pour yogurt into a large mason jar making sure to leave room at the top for the yogurt to grow. (As the cultures start reacting to the sugars [sweetener + coconut] the probiotics will cause the yogurt to expand) Take a paper towel and cover the top of the mason jar by rubber banding the towel over the top. Sit on countertop for 6 to 8 hours (shorter for warmer climates and longer for colder climates). The longer the yogurt sets and the warmer to environment, the thicker the end result will be. Chill and enjoy with your favorite fruit and/or granola.

* Some people prefer to blanch the almonds before blending. This is a process of removing the outer skin of the almond to even out the texture of the yogurt. I personally don’t mind leaving the skin on, however you can remove them if you’d like.
